Hanukkah Coins Salad
1 English cucumber (seedless) sliced thinly in rounds
2 carrots, sliced thinly in rounds
1 small zucchini, sliced thinly in rounds
3 radishes, sliced thinly in rounds
4 cherry tomatoes, halved
2 scallions, trimmed & sliced thinly in rounds
2 T. sliced kalamata olives
1 T. fresh lemon juice
2 T. olive oil
Salt & freshly ground black pepper to taste
1/4 c. crumbled feta cheese
2 T. chopped cilantro
Toss together first seven ingredients. (May be done ahead and refrigerated)
Whisk together the lemon juice and olive oil. Season with salt & pepper, Drizzle over the vegetables and toss to combine.
To serve, gently mix in the cheese and cilantro.
Serves 4
I had this or one very similar at a neighbors celebration and loved it, so will be a side dish at our holiday dinner also. Maybe someone here in Glenbrooke has another take on this dish that they could share
